Grilled Shrimp Tacos with Avocado-Corn Salsa

Tacos prepared with about any meat tastes delicious. They're a fun food because the fixins inside the tacos are endless.

Grilled Shrimp Tacos

For the salsa:


  • 4 ears Corn, shucked
  • 3 Tomatoes, diced and no seeds
  • 4 Scallions, sliced thin
  • 2 Limes, juiced
  • 2 tablespoons Fresh Cilantro, chopped fine
  • 1 Serrano Chile Pepper, chopped fine and no seeds
  • 2 Avocados, chopped
  • Seasonest Adobo Seasoning Blend


  1. Cut kernels from corn cob and place in a bowl.
  2. Add the scallions, tomatoes, lime juice, cilantro, Serrano pepper, and Seasonest Adobo Seasoning Blend.
  3. Stir to combine.
  4. Add avocado to bowl and refrigerate until later.

For the tacos:



  1. While grill is heating, combine lime juice, oil, and Adobo Seasoning together in a large bowl. 
  2. Add in the shrimp and stir.
  3. Thread shrimp on the skewers and place on the grill.
  4. Grill for 3-4 minutes on each side until charred and pink.
  5. Remove shrimp skewers from the grill.
  6. Remove shrimp from the skewers and cut each shrimp in half.
  7. Assemble shrimp and salsa into the tortillas. Serve with your favorite sides.
