Italian dressing can be very, very good. You do not have to settle for olive oil and vinegar alone. There is a very good creamy Italian that you can make from scratch using Italian seasoning.
Put Your Italian Seasoning to Great Use
This Creamy Italian dressing is so good you’ll be making it all the time. But, it is a little tricky. There is no opening a jar of mayo for this one. You have to do it from total scratch!
Creamy Italian Dressing Recipe
1 teaspoon Organic Cider Vinegar or Wine Vinegar
2 teaspoons freshly squeezed Lemon Juice
1 Egg Yolk
¾ cup of Olive Oil
½ clove of Garlic, minced
1 tablespoon Seasonest Italian Seasoning
First, wash the eggshell. The reason being that is where salmonella would live, if it is there at all. If you wash it off, it won’t get in your raw yolk.
Put vinegar, lemon juice and egg yolk into a medium bowl. Whisk ingredients to mix.
Slowly drip olive oil into mixture while whisking. Once you see it starting to incorporate into the egg mixture and it thickens slightly, you can start a very thin stream while you’re constantly mixing.
When you have incorporated all of the olive oil, add the garlic and Seasonest Italian Seasoning. Put your immersion blender into the mixture and mix until very thick. This should take only about 30 seconds. It will firm up the dressing to make it like mayonnaise.
If you pour the olive oil too fast then the mixture will separate. You must go painfully slow.
Keep the dressing refrigerated and take it out just before serving. This Italian Seasoning dressing should be good for a week or two, but all great chefs make a fresh batch for each dinner where it is needed.
