Chili spices and select ingredients are what make the chili, just ask any chili cook-off winner. While chili chefs tend to have their own main ingredients that make their chili different than the others, the chili spices have a familiar ring from recipe to recipe.
The standard chili spices and herbs for chili con carne are:
- Cumin, ground
- Chile Ancho, ground
- Paprika, ground
- Cayenne, ground
- Coriander, ground
- Mexican oregano
Usually chili powder is a blend of ancho pepper, paprika, cumin and Mexican oregano. Of course, you have a lot better control over the flavor if you use them separately in the amounts you need to achieve your own special, unique flavor.
